Recipe: Mini Cheeseburger Pies

Marcia asked me earlier in the week for a recipe for mini-cheeseburger pies. I didn’t actually work from a recipe for these, but here’s a quick breakdown:
One recipe for Barefoot Contessa’s Perfect Pie Crust
2 large potatoes, boiled and mashed
Ground turkey (I only used about 1/3 lb, leftover from tacos the other night) cooked, drained, and mixed with a little ketchup and garlic salt
Cheddar cheese
Roll out the pie crust, then cut into 3” by 3” squares and place inside greased muffin tins. Bake at 400 for 15 minutes, then fill with potatoes and turkey. Top with cheddar cheese and return to oven until cheese is melted.
I’ll be honest: this was not the most glamorous dinner I have ever made, and the editors of Cooking Light are not going to be busting down my door anytime soon. Still, these little guys were delicious—the boyfriend loved ‘em—they were wicked inexpensive, and they traveled really well for lunch the next day. We were thinking you could switch out the fillings, too—any ideas?
