Frugal Friday: In Which We Cook From the Freezer

Easy Peasy Chicken
There are no peas in this recipe. But “easy brown-sugar and soy saucy chicken” doesn’t rhyme. Anyway, I threw it together the other night using only stuff that was already in my pantry–part of the Great Super Save of October 2008. I served it with rice and roasted carrots, and it was a total hit.
Ingredients:
2 boneless, skinless chicken breasts
1 cup soy sauce
½ cup brown sugar
1 tbsp garlic powder
Mix the brown sugar, soy sauce, and garlic powder in a shallow oven-safe dish (I used a pie plate). Marinate the chicken in the fridge for an hour or so, flipping once so it coats evenly. Stick the whole dish in the oven at 350 degrees for twenty minutes. Take the chicken out of the marinade, put it on a baking sheet, and finish at 350 for about fifteen minutes more.
Amazing. Freezes well, too.
